Darling Downs Wagyu ™ is a premium brand established by the Australian Agricultural Company (AAco), which have been selectively breeding quality cattle for over 178 years. Wagyu is a breed of beef cattle possessing a genetic trait that predisposes it to high levels of marbling.

AAco cattle are specially bred in Australia from the Wagyu cattle of Japan (that produce the famous Kobe Beef) in the clean and natural environment of the Darling Downs. These cattle are nurtured in the traditional Kobe-style, to achieve the renowned world-class taste & tenderness. The genetic make-up of the Wagyu cattle, combined with a year on a quality grain based diet produce the delicious protein rich meat that enjoys ‘Omega 3 like’ monounsaturated fatty acids.

These good “essential” fats are displayed as white flecks and “rivers” within the red meat which display a marbling effect. Marbling is responsible for the firm texture of the raw chilled meat but melts during grilling to provide the juicy taste and wonderful flavour.
